But most Saturday mornings this changes. I sleep in a bit (hopefully) and then roll out of bed around 9:00 or 10:00 to make a brunch of sorts. We had some blueberries and bananas on hand this weekend so I decided on waffles. Waffles are just a no brainer and there's something so nostalgic about whipping that wonderful waffle maker out, don't you think?
And while it's pretty darn hard to mess up a waffle, I do think these turned out just fabulous. Most banana waffle recipes have you mash up the banana, but I chopped mine so that the end result was thick chunks of them all throughout the waffle.
Top these babies with more fresh blueberries and banana (and walnuts in my case) and you're good to go! I used whole wheat flour for a healthier option, but really any all purpose flour will do.

Whole Wheat Blueberry Banana Waffles CCK Original

~dry ingredients
2 C wheat flour
2 tsp baking powder
1/4 tsp cinnamon
1/8 tsp salt
~wet ingredients
3 eggs
1 3/4 C milk
7 Tbsp butter, just to melting point and slightly cooled
1 C chopped banana
3/4 C blueberries
1 1/2 Tbsp honey
Combine dry ingredients in large bow, set aside. Combine wet ingredients in separate smaller bowl. Set aside.
Make a well in the dry ingredients and stir in wet ingredients. Stir in honey.
Fold in banana and blueberries.
Cook according to waffle maker instructions and top as desired.

ReplyDeleteThese were great! This recipe was my first attempt at making waffles and I was nervous, but the waffles turned out great. I love the amount of fruit in them.
ReplyDeleteI ended up just slightly changing how I made the recipe. Due to some digestive issues I used buttermilk instead of milk and soaked the dry ingredients in the buttermilk overnight.
I also just threw the whole 6oz container of fresh blueberries into the mix since it wasn't too much over the 3/4 cup of blueberries called for in the recipe.
Other than that I followed the rest of the recipe exactly.
